This recipe is a sure winner in the kitchen with kids and adults! It comes together easily and makes for a filling comfort food packed with veggies! I tend to go high with the veggies and low with the chips, one small bottom layer is all you need if you want to keep the carbohydrates in check! Pair it with my Mystery Spice Chicken Wing recipe (see below) and you have great finger food for parties or gatherings! Enjoy
Nacho Chip Salad
Preheat: 400F Servings: 4-6
Ingredients:
a package of corn chips, rice/bean chips or bean chips, sea salt/natural flavour
1 package of taco seasoning mix (Simply Organic)
1 ( 540ml) can of black beans, rinsed or
1 lb of ground lamb or beef
2 medium tomatoes, centre seed pulp removed
2 avocados, diced
1/2 cup of kalamata olives, pitted and sliced
1/4-1/2 cup of red onion, diced
2 carrots, peeled and grated or small dice
1-2 bell peppers (green, red, orange or yellow)
1 cup of cucumber, diced
2-3 cups of grated cheese
1-2 cups of romaine lettuce, small julienne
3 green onions, chopped
salsa, to preference

Preparation:
prepare the taco seasoning as per package instructions, adding the black beans or ground meat (or both)
on a baking sheet lined with parchment paper, spread the chips out
add a layer of cheese
add the beans or ground meat
add tomato, bell peppers, red onion,olives
top with cheese
place in preheated oven till cheese bubbles (10-12 minutes)
remove from oven
to create the salad, top with shredded lettuce, avocado, cucumber, green onion and salsa
