I collect beautiful Indie spice wheels ( three to be exact). I l o v e the convenience of having spices all in one container ! I store ground spices like turmeric, garam masala, tandoori, cayenne, nutmeg, salts and more.
One day, while reaching for something else in my cupboard, my wheel fell out of the cupboard and although I managed to catch it before it hit the counter the carnage inside was evident! Or so I thought.
“Well, there go my organic spices...".
Hubby suggested that I salvage what I could and use it as a rub on meat.
“Anna’s Mystery Spice” was born!
Literally it was a mystery, since I could not tell you what ended up in the mix and in what quantity. So I took a chance and created this slow and low chicken wing recipe.
It was a hit!
And it has been asked for over, and over and over again…… until one day, I ran out of the mystery spice! ☹️ You see my dilemma now, right?

Well, with a little ingenuity and chef skill, I recreated the recipe with great success!!
Depending on the number of wings (this tray is about 48) adjust the recipe accordingly (or make a spice batch and have it ready to go for the next bake!) These spices overlap a bit, but it is what makes the flavours come together into a (mildly or ) spicy feast! You can use approximately 2-3 tsp of each spice (more or less of the spicy ones and to preference) and salt according to preference. They will be juicy, tender and extremely flavourful!!! You can also use this as a rub for roasted chicken or as a steak rub. We enjoy using Yorkshire Organic Wings and find they are just right in size, not too much fat and definitely enough meat!
Great finger food for football Sundays, Card night, as appetizers and picnic basket travellers!!
Low and Slow Mystery Spice Chicken Wings
*Bake: 275F-375F
Bake Time: 2 hours 15 minutes
Prep Time: 15 minutes
*Air Fryer Method: Fresh not frozen, 30 minutes, rotate and flip at 15 minutes at 375F. Always check with a meat thermometer for doneness (165F).
Ingredients
36-48 chicken wings
2- 3 tsp each of turmeric, curry, garam masala, cumin, chili powder, oregano, paprika (smoked and regular) and cayenne
1-2 tsp of sea salt
1 tsp of ground black pepper
1/4- 1/2 tsp of tandoori spice, optional
Preparation
in a large bowl or plastic bag, place the chicken (dried with paper towel) in the bag, sprinkle the spice in and mix well.
place on a tray/s lined with parchment
start them off at 275F for one hour, bump them to 325F for 45 minutes and then 375F for 15-30 minutes.
check them midway during the last 30 minutes (375F cycle) to ensure they are not drying out( dependant on the size of your wings).
serve with chipotle sauceor other healthy sides!
