Classic Cornbread- Not. But oh, so much better!

Growing up I never had cornbread, so when I first made cornbread, I had no taste barometer of what it should or should not taste like. What I discovered, was that I am not a fan of the classic cornbread. Since I made this personal declaration, I have others commenting that my cornbread is not like normal cornbread, yet somehow better! Yay! If you are or are not a fan of cornbread, this recipe may either turn you into a fan and/or awaken your tastebuds to a new adventure in cornbread! For those with dietary restrictions, this bread is also dairy free, gluten free and egg free!


New Style Gluten Free Cornbread

Not your classic cornbread. In fact, I am not a fan of the classic cornbread and that is why I modified this recipe to suit my preferences. This bread is a hit with cornbread ‘like-ez’ and you will never know it is gluten free, dairy and egg free! (adapted and modified from “Gluten Free Baking Academy-Classic Cornbread”)


Prep Time: 20 minutes

Bake Time: 25-30 minutes

Preheat: 350F



Ingredients:

  • 3/4 cup of organic corn flour

  • 1/4 cup of cornmeal (medium to fine)

  • 1/2 cup of sorghum flour or brown rice

  • 1/2 cup of tapioca flour

  • 1 tsp baking soda

  • 1 tsp baking powder

  • 1/2 tsp of sea salt

  • 1 tbsp of ground flaxseed or ground chia (or alternatively 2 tsp of pysllium husk)

  • zest of one lime (approximately 2 tsp of lime zest)

  • 1 1/4 cup of plant mylk with juice of one lime (approximately 2 tbsp of lime juice)

  • 1/4 cup of applesauce

  • 1/4 cup of honey (vegan option: coconut or maple syrup)

  • 2 tbsp of coconut oil, melted and warm


Preparation:

  • prepare a square baking pan (or a cast iron frying pan) with parchment paper.

  • measure dry ingredients and sift in a medium large bowl


  • add lime zest

  • in measuring cup combine the lime juice with 1 1/4 cup plant mylk, set aside

  • in a separate small bowl combine the remaining wet ingredients and whisk together.

  • add the all wet ingredients to the dry, whisking as you add them

  • pour into the prepared pan

  • bake at 350 F for 25-30 minutes

  • test with toothpick to ensure bread is done and no dough is sticking to toothpick

Meal Tip/Preparation

  • serve with New Style Smokey Bean Chili

  • to help ensure the best rise, mix wet with dry ingredients quickly and have pan and oven ready to bake!
