Okay, so I can't really figure out what I want to call these delightful little crepe-ish pancake-ish (there I go again!) treats. I was looking for recipes on making tortillas and came across crepes and was inspired to experiment a little between a pancake and a crepe but not quite one or the other. This is what I created. They truly are delightful! If you are doing Paleo, some consider bananas un-paleo. I tried the recipe both ways, with and without bananas. It changes the sweet factor- but still yummy either way. I also made some coconut syrup by accident, what a nice accident! Now what to call them.....

Ingredients:
2 egg whites
1 egg yolk
pinch of salt
2 tbsp of coconut cream
1 tbsp of tapioca flour
1 tbsp of ground flax seed
1/4 cup of water
1/2 ripe banana, mashed (optional)
coconut oil for fry pan or iron cast griddle
Preparation:
prepare two bowls; one for the egg yolk and one for egg whites
separate the egg yolks from the whites
beat the egg whites with a pinch of sea salt, beat till fluffy, set aside
beat the egg yolk with the coconut cream and banana, if using
stir in the tapioca starch and ground flax seed
fold in the egg whites till fully combined
using 1/4 cup portions, pour out onto a greased pan or griddle
cook till a golden underside and bubbles appear on top side, flip over and do same
Meal Tip/Preparation:
serve with blueberry, raspberry, sliced bananas, sprinkle of hemp seeds and a drizzle of maple syrup
to make coconut syrup; take 1/4 cup coconut cream add 2 tbsp of honey and drizzle on top
