Generally, I do not like to be not long on words, I can write if I choose to on all the benefits of these muffins, but today I choose not. So, in the spirit of getting on with it, here is a quick, easy, tasty muffin that will have you wondering why you ever thought healthy was boring! These muffins have no grains, no refined sugars and are packed with protein and antioxidants.
Paleo Lemon Poppy Seed

Servings: 6-8 muffins
Ingredients
3 eggs, room temperature best*,
separated
1 tsp vanilla extract
2 tbsp of lemon juice
3 tbsp of honey
1 tbsp of coconut oil, melted/liquid form
pinch of salt for egg whites
1 1/2 cup of almond flour, fine ground
1/8 cup of ground chia seed or ground flaxseed
1/2 tsp of ginger powder
1 full tbsp of poppy seeds
1/4 tsp of baking soda
1/2 tsp of baking powder
1 tbsp of lemon zest, fine grate
Preparation:

in two small bowls, separate the yolks from the whites.
in one bowl, begin beating the egg yolks , slowly add in the honey and vanilla extract. Beat till creamy looking, and egg looks lighter in colour. Stir in coconut oil. Set aside.
beat the egg whites, adding the pinch of salt. Beat till you get fluffy peaks. Set aside.
In a medium bowl, combine the almond flour, baking soda, baking powder, chia or flax, poppy seed, lemon zest and ginger. Mix together
using a spatula, add the egg yolk mix and lemon juice to the dry mix and combine well. A muffin dough will form.
add half the egg whites and mix into the muffin dough, mix well and then add remaining egg white mix.
in a muffin tin, line with parchment paper, fill with muffin mix.
bake at 325F for 15 minutes. Check doneness with toothpick.
Meal Tip/Preparation:
great as breakfast snack or treat
to bring eggs to room temperature quickly, place in a bowl of warm water for 10 minutes. Helps with texture or muffins, but not a deal breaker!

if you prefer fresh ginger, grate and use 2 tsp.
