Nothing says Summer like a BBQ and Burgers!

Okay if you have not noticed by now, I like versatility with my recipes! I don't just want one meal out of it, I would like to make several different types of meals. This burger recipe is ideal not only for vegetarian burgers, but for burritos or enchiladas! Just find your favourite tortilla wrap bread, cheese and sauce and bake or broil for several minutes. Black Bean Rice Burgers Preparation Time: 15 min Cook time: 45 min Servings: 8

Ingredients:

  • 1 tablespoon of coconut oil (or ghee)

  • 1 small red onion, minced

  • 1 red pepper, chopped

  • 3 cloves of garlic, minced

  • 1/4 teaspoon of cumin

  • ½ teaspoon of turmeric

  • 1/4 tsp smoked paprika

  • 1 cup of cooked or canned black beans, drained and rinsed

  • 1/4 cup of ground flax seeds

  • 1/4 cup ground raw walnuts

  • 2 tbsp of coconut sauce

  • 1 beaten egg or

  • chia paste egg (1 tbsp of ground chia seed in ¼ cup warm water, let sit 5 minutes)

  • 3/4 cup of cooked brown jasmati or red rice

  • 1 tablespoon of Dijon mustard

  • ½- 1 teaspoon of sea salt ( or salt to preference)

Preparation

  • prepare the rice by placing 3/4 cup of rinsed rice in a pot with 1 1/2 cups of water.

  • add a pinch of salt and let cook for approximately 35 minutes. When done let cool.

  • in the meantime, heat the oil or ghee in a fry pan on medium heat.

  • add the onion, red pepper and garlic. Sautee onions till they are translucent.

  • stir in the cumin and turmeric, paprika cook for additional minute. Set aside.

  • in a food processor, add the sautéed red pepper mixture, pulse 2- 3x then add beans, rice, ground flax, walnuts, mustard, beaten egg (or chia paste), salt, coconut sauce and pulse just till mixed together.

  • transfer to a large bowl and refrigerate for 15-20 minutes

  • using a measuring cup: (1/2 cup portion size) roll between oiled hands and flatten into round patties or use a greased patty maker.

  • place on a baking sheet lined with parchment paper and bake at 350F for 8 minutes on each side. They will puff slightly; be careful when flipping to avoid cracking patties!

Meal Tips/Preparation:

  • leftovers can be frozen for 2 weeks; reheat in oven for 10-15 minutes at 350F or set on BBQ for 5 minutes on each side.

Using the unbaked filling for the next two meal tips:

  • to make small burrito wraps- fill them with 1/2 cup of black bean mixture, add additional ingredients like cheese, fold wrap and bake or BBQ, 5-8 minutes (wrap the tortilla wrap in parchment paper then foil for baking so the wrap does not burn)

  • to make enchiladas , use 2 corn tortillas or personal perference, cheese and a mild sauce. Place filling between two tortillas; place under broiler or on BBQ till cheese melts.

Note: ensure your burrito or enchiladas are fully heated through if you have used an egg instead of the chia paste egg.
