DIY: Healthy tropical fruit n'ice cream bars!

Tropical N’ice Cream Bar


Pre-Prep: chill coconut cream in fridge for 4-5 hours or overnight

Prep: 15 minutes

Freezer: 2-4 hours

Ingredients:

  • 1 cup of frozen mango chunks

  • 1 cup of frozen papaya chunks

  • 1 cup of frozen pineapple chunks

  • 1 frozen banana, chunks

  • 1 can of chilled coconut cream

  • 2-3 tbsp of honey

  • 1 tsp of vanilla

  • 1 tsp of coconut oil

Preparation:

  • to keep the fruit frozen you will need to place each fruit in fridge while you prepare the other fruit

  • puree mango and papaya in a high speed blended; scrape out of blender and set aside in a small bowl

  • puree pineapple; set aside in a separate small bowl

  • puree banana; set aside in another small bowl

  • make Coconut Whipped Cream (See Recipe)

  • prepare a freezer safe dish or bowl with coconut oil; set aside

  • divide whip into 4 equal parts

  • divide mango and papaya in half; add one portion of coconut cream whip and swirl together

  • add to freezer safe dish, spreading on bottom evenly

  • do the same for the remaining fruit, pineapple and banana and layering on top of mango/papaya

  • top with another layer of mango/papaya

  • place in freezer for 2-4 hours

  • allow 10-15 minutes at room temperature before serving

  • cut into bars and serve
