Protein, Healthy Fats and Fibre Breakfast

Are you still bored with breakfast? Have you been following the "Build A Meal" (BAM) Breakfast series? If you have, you know this is the grain free recipe to be used with or instead of the Grain Free Brekkie recipe. I feel a modified rendition of 'Bob the Builder' song coming on......"Annnnna the Builder...Can we make it? Yes we CAN!" So much fun!

By the by, I have added 'Bonus' recipes for those who like Oats!!! Check next posting!

 

Coco-Nutseed Granola

Prep: 30 minutes

Bake: 12 minutes at 325F


STEP ONE:

Ingredients:

Using the Grain Free Brekkie nut mix (See Recipe) or

In a medium bowl combine:

  • 3/4-1 cup of raw walnuts, roughly chopped

  • 2/3-3/4 cup of raw cashews, roughly chopped

  • 1/2 cup of pumpkin seeds

  • 1/2 cup of sunflower seeds

  • 3/4 cup of shredded coconut flakes*

  • 2 tsp of cinnamon

  • 1 tsp of cardamon

  • 1 tbsp of ginger powder

Mix all ingredients together with a spoon. Set aside. You can hold back the coconut flakes and add them mid-way through the bake cycle to prevent over-toasting them.

STEP TWO:

Ingredients:

In a small bowl or ramekin combine:

  • 1/8 cup of pineapple or apple juice

  • 1-2 tbsp of honey

  • 2 tsp of melted coconut oil (add up to 1 tbsp, if granola looks too dry when mixing)

  • 1 tsp of vanilla extract

Mix and stir ingredients into the nut and seed mix. Ensure everything is well coated.

Evenly spread on a cookie sheet covered with parchment or silicon. Place in preheated oven of 325F. Let bake for 6 minutes. Stir mix and let cook for another 6 minutes. Remove from oven. If granola looks wet, allow to bake for another 2-3 minutes. Follow Step Three.

STEP THREE:

Use the Grain Free Brekkie seed mix (See Recipe) or combine:

  • 1/2 cup of mulberries or raisins

  • 1/2 cup of golden berries or cranberries

  • 1/4 cup of hemp seeds

  • 1/2 cup of ground flaxseeds (or add 1 tbsp when ready to eat)

Meal Tips/Preparation:

  • this recipe is very easy if you use the “Build a Meal” base recipe mix “Grain Free Brekkie” recipe; the fruit and nut combinations may differ slightly just to give you variety and nutrient diversity.

  • store in air tight container for 2 weeks.

  • use 1/2 cup of mix for breakfast granola with milk of your choice.

  • add fresh berries, apple or banana for healthy topping options.

  • use with yogurt, trail mixes
