When we lived on Vancouver Island, we had a favourite restaurant we used to frequent. My dessert of choice was always the Berry Crumble! I had made many a crumble and this recipe comes as close as possible to their signature dessert. I just don’t believe in spoiling the natural taste of sweet berries with added sugar! This comfort crumble is a perfect treat anytime of the year! Frozen berries can be used when off season.
Rustic Berry Crumble Pie
Prep: 10 minutes
Cook and Bake: 45 minutes
Bake: 350F
You will need a deep pie dish or a baking dish.
Ingredients:

4 cups of mixed berries (raspberry, blueberry, strawberry (chopped)) fresh or frozen)
1 cup rhubarb, chopped
4 tablespoons of kudzu root powder or arrowroot powder
4 tablespoons of water
7 tablespoons of honey
1 cup of quick cooking oats
1/2 cup of walnuts, chopped
1/8 cup of coconut oil (melted)
2 tablespoons of kudzu root or arrowroot powder
1/2 teaspoon of cinnamon
pinch of salt
1 tsp of coconut oil for greasing pie dish
Preparation:
Prepare the crumble for the pie.
In a bowl combine the oats, chopped walnuts, pinch of salt, cinnamon and the arrowroot. Mix together.
In a small saucepan add the coconut oil and 4 tablespoons of honey. Heat just till melted.
Drizzle the honey and oil mixture into the oat mixture, gently mixing with a fork to ensure everything is coated. Let sit for 10 minutes.
Prepare the filling.
Place the berries and rhubarb in a medium sauce pan. With heat on medium-high, add 3 tablespoons of honey and stir with fruit until it melts.
In a small cup, add 4 tablespoons of cold water to the kudzu root powder and stir till all powder is melted.
Once the berries are boiling, add the kudzu, stir for 1 minute and remove from heat.
Pour berries into a oiled deep baking dish.
Spread the crumble onto the berries. With a spoon or your hands gently sprinkle the crumble on top of the berry mixture. Ensure the whole pie is covered with the topping.
Place dish into the oven at 350F and bake for 25-35 minutes (until you notice the berries bubbling).
Remove from oven and let cool for 30 minutes.
Serve alone or with whipped coconut cream or ice cream.

Meal Tips/Preparation:
If you are avoiding any glycemic impacting sweetener, you can substitute Stevia powder. Use 1/8 of tsp in berry mix and 1/8 tsp for topping. ( 1 tsp of stevia is equivalent to 1 cup sugar).
