This pie makes a perfect addition to any holiday feast. It is easy, raw, healthy and no refined sugars or flour. The addition of lemon juice gives this pie the right amount of tang to match the sweet in the bananas and dried fruits.
Pre-preparation:
soak dates in spring water for 1-2 hours
optional soak of walnuts 6- 12 hours and then dehydrate
Prep Time: 30 minutes
Equipment: Blender, Pie dish
Ingredients
2 1/2 cup of raw walnuts
6 dates, soaked
1/4 cup of raisins
3 tbsp of ground chia seed
1/2 tsp of coconut oil
1 tsp ground cinnamon
1 tsp ground ginger
3 tbsp of organic lemon zest
2-3 tbsp of organic lemon juice
2 bananas
6 apples, chopped (Cripps Pink-Pink Lady, Fuji or Honeycrisp)
The Crust:
Preparation:
place the walnuts, 3 dates and 1/4 cup of raisins in the blender. Pulse and blend till well macerated, 2 minutes. Add 1 tbsp of lemon zest and pulse till well incorporated and forms like a dough.
lightly oil the pie dish with coconut oil
remove walnut mixture from blender and spread onto a pie dish forming a crust by pushing down the walnut mixture.
sprinkle the top of the walnut crust with 1 tbsp of the lemon zest.
take 1/2 an apple slice thinly with a mandolin or knife. Layer the apple slices on top of the walnut mixture.
The Filling:
Preparation:
puree one banana, 5 1/2 chopped apples, the remaining 3 dates, the cinnamon, ginger, chia, 2-3 tbsp of lemon juice till well minced.
pour apple mixture on top of walnut crust and spread evenly.
sprinkle the top with remaining lemon zest.

The Topping:
Preparation:
thinly slice with a knife or mandolin the remaining banana.
pour any remaining lemon juice on the banana and mix well.
decorate the top of the pie with the banana slices and optional apple slices.
sprinkle with cinnamon

cover pie and let set in fridge for 1-2 hours
consume within 3-4 days
